Car-raw-t Cake ;)

I have been juicing carrots galore, leaving me with a ton of carrot pulp.  My dear friend Claire inspired me to make some Carrot Bread.  This was a big hit among the crowds.

3 C carrot pulp

3 bananas

1 C sunflower seeds

1 C almonds – ground

1/2 C tahini

1/2 C honey

1/2 C raisins

zest of one orange

juice of 1 orange

6 dates soaked in warm water – pitted

1 TBSP cinnamon

1 tsp Himalayan Pink Salt

In a blender grind nuts and sunflower seeds.  Add remaining ingredients.  Once you have a dough consistency, put dough into a cake pan.  Dehydrate for 8 hours, remove from pan and continue dehydrating until the outside of the cake is firm.  Slice cake into slices and dehydrate an additional 4 hours.  Serve with fresh applesauce for a refreshing, light, sweet treat!
