Thai Slaw

I do not love raw cabbage, however I seem to keep buying it with the intention of learning to love it.  Rather than letting it go to waste, I decided to turn my cabbage into a cooked dinner.  This dish is filling, simple, and delicious!

Thai Slaw


1 large TBSP almond butter

1 TBSP honey

3 cloves garlic – minced

1 TBSP ginger – minced

2 tsp chili pepper flakes

1 lemon – juiced

1/2 C water

In a large saute pan, add all ingredients.  Turn the stove onto low, and let all ingredients combine.  Add following ingredients to saute pan, cook over low for 45 minutes.  Remove from eating, and right before eating, squeeze the juice of a fresh orange or lemon over the entire dish, and enjoy!

1 Cabbage – shredded

2 bell peppers – julienne

2 carrots – peeled with a peeler

1 tsp sea salt
