Cornbread without the Guilt

No oil, salt or sugar!

Serving size – 12 muffins

1 1/2 C blue cornmeal

1/2 C whole wheat pastry flour

2 TBSP ground flaxseed

2 tsp baking powder

1/2 tsp Himalayan Pink Salt

1 C unsweetened coconut milk

1/2 C unsweetened applesauce

1/4 C local honey

1 C frozen corn kernels

1 C chopped, roasted, pecans

1 C dried bing cherries or raisins

Preheat oven to 350 and line muffin tins with paper liners.

In a small bowl, whisk together honey, coconut milk and applesauce. In a separate bowl whisk together cornmeal, flour, flaxseed, baking powder and salt, .  Combine two bowls until well mixed.  Add corn kernels and nuts, leaving a few nuts aside to sprinkle on top, and fold together.

Fill each muffin cup about 3/4 full . Bake for 25 minutes, or until golden-brown delicious. Set aside to cool.

  1. This recipe starts off with “no oil, salt or sugar”
    then I see “1/2 tsp Himalayan Pink Salt” as
    one of the ingredients. How is this a “no salt” recipe?


    1. Hi Marc, the amount of salt in the entire recipe does. It provide enough of a problem for individuals who wish to not consume salt. The salt does not need to be added. Thank you for your response.
