Tonight I was craving cookies. Earlier in the day I had soaked 1 Cup of chia seeds in rice milk in the fridge. I decided the chia would be the binder to my cookies! This dish is quick, easy, delicious and guilt free! What more could you ask for?

1 C Chia seeds – soaked in (rice) milk for 1 hour
2 C rolled oats
1/4 C golden raisins
1 C almond butter
1 C honey
1/4 C cacao nibs (dark chocolate chips will work too)
- In a bowl, whisk together almond butter, honey, chia seeds, and cacao nibs. Add oats and raisins and mix well.
To garnish
1/4 C honey
1/4 C carob powder
1/4 C hazelnuts – chopped
- Whisk carob and honey together, adding a little water if needed to thin out, and drizzle on top of cookies. Sprinkle with chopped hazelnuts.
- Spoon dollops of mixture onto baking tray in the size of cookie you prefer!
- Preheat oven to 375 degrees. Bake for 15 minutes, flip over and bake an additional 5-10 minutes, or until golden brown. Let cook and enjoy!
