Kosher for Passover Cake!

Cha Sameach! Ok, so you’ve hit that Passover slump and you’re tired of boxed cakes.  Well, get yourself back on track, with this no-bake cake!

Best Passover Cake :)

Crust

1 ½ C Pecans

1 ½ Walnuts

1 ½ C medjool dates

¼ tsp vanilla extract

pinch Himalayan Pink Salt

  1. Blend all ingredients in a food processor until forming a dough-like consistency.
  2. Press pie crust into a nonstick 8” SpringForm pan – press the crust along the bottom and up the sides of the pan.

Filling

1 C cashews – soaked overnight

2/3 C ice

½ C medjool dates

¼ C water

¼ tsp vanilla

pinch Himalayan Pink Salt

  1. Blend ingredients until smooth. Let the ice dissolve and then see if you need to add a little more water until reaching a smooth, but thick consistency.
  2. Pour cashew cream into the pie crust, filling 2/3 of the pan.

Garnish

Strawberries – sliced

Bananas – sliced

*Any fruit of your choice

  1. Garnish the cashew cream with your sliced strawberries and bananas.
  2. Fold the sides of the pie crust over the top of the fruits, to make for a pretty cake. (If this step is confusing you, just skip it)!
